Cook and cool 1 Cup Pearl Barley in 2-1/2 Cups water, simmer for 45 minutes stirring occasionally, until tender but still chewy 8-10 radishes sliced thinly (about 3/4 cup) 3/4 Cup green bell pepper diced 1/2 cup green onions sliced 1/2 cup crumbled feta cheese 1/3 cup chopped walnuts 1/3 cup Greek salad dressing

1-3/4 Cup water
3/4 cup dry red lentils, rinsed and drained (I used yellow split peas)
1/4 chopped onions
chopped cilantro
1/2 teaspoon salt
1/2 teaspoon ground cumin
1 clove garlic, minced
4 tostada shells (I used corn tortillas)
2 cups chopped vegetables – broccoli, tomato, zucchini or yellow squash
3/4 cup grated Monterey Jack cheese (I used mozarella)
Stir water, lentils, onion, cilantro, salt, cumin and garlic in saucepan. Bring to a boil, reduce heat and simmer, covered for 12-15 minutes until lentils are tender (!) and most of the liquid is absorbed. Mash the cooked mixture and spread it on tostadas. Top with vegetables and cheese and broil approximately 2 minutes until cheese melts.

I went with Sue to her nutritionist appointment last week and learned a couple of points that I thought I should share.
1. Avoid corn products in all forms. Corn coverts to fat all too easily – that’s why they use it to feed cattle and hogs. So avoid corn chips, corn flour, corn syrup, and just plain corn to name a few.
2. Try to use organic dairy products whenever possible so you aren’t getting the antibiotics or growth hormones.

Naan Pizza
Start with naan or Boboli crust, lightly spread pesto sauce or red sauce on the base. Top with a light sprinkle of mozzarella, chopped spinach, sliced mushrooms, olives, and tomatoes. Season to taste.
Bake at 350 for 10 minutes to melt cheese and warm the crust.

1 Golden Delicious Apple, cored
15-20 Red Seedless Grapes
1-2 chopped green onions
Romaine lettuce
Watercress
¼ Cup chopped walnuts
Wheat germ
Lemon wedge
1 T yogurt
1 T mayonnaise
¼ tsp Beau Monde seasoning
Cube the apple, and squeeze the lemon juice over it to keep from browning. Set aside.
Make a bed of Romaine lettuce and watercress. Slice green onions and add to lettuce bed. Mix yogurt, mayo, and seasoning. Toss apples and sliced grapes in dressing and place on lettuce. Sprinkle with chopped walnuts and wheat germ.
